So, the plan was to have a little going away meal. My cousin’s son chatted with me a couple of nights ago. He is moving out of town and wanted to get together. I suggested a meal at our house and all was well. He told me his brother and sister-in-law were in town. And I invited my parents. Dean and Gabi are out of town. So, I counted 9. Thaw out some chicken. We’re good to go.

Part of the issue is that I wanted to make one of my favorite meals. Chicken fried chicken. And I always conveniently forget how long it takes and how messy it is. So we had two packages of chicken. I should have grilled it…

So, working away and my other cousin called and told me that she decided to come after all and wondered if I had enough for 4 more. Huh? Apparently, she had been invited but had turned down the offer. I was never informed.

Sure, we’ll make it work. Might not have enough potatoes, but, we’ll make up for it with the corn my parents are bringing.

So, the first cousin arrives. I should have known he would bring his other brother too. No problem!

Then, just as we get ready to serve the meal. Knock, knock. Our Ethopian friends/neighbors are at the door. They told Gracie that they would come over tonight. I figured they were here to say “hey” and leave. Had they eaten? Nope. What’s another 3 people?

So, I had planned for 9 and ended up feeding 17.

Everyone ate. There was plenty of chicken. Had I grilled, we wouldn’t have had enough. The tenderized breaded chicken fried chicken tends to go farther. And we even had a last spoonful of potatoes for me to finish. Yum.
